Checkerbark is an American take on the traditional London Dry Style Gin. While England’s demure gins are often restrained, Checkerbark is a bolder version of the British classic, and features wild harvested juniper berries. The inclusion of this unique and wild harvested juniper berry delivers a gin with a distinct flavor from a tree with a unique bark (the Checkerbark juniper tree).

Limited Edition: Big Bad Baptist Imperial Stout + 120 Minute IPA

Epic Brewing: Big Bad Baptist Imperial Stout

One Big Bad Imperial Stout with Cocoa nibs and Coffee beans. Each season's release uses a different dark roasted coffee.

Glassware: Snifter, Tulip White Wine
Food Pairings: Hard cheeses and dark chocolate desserts

Dogfish Head: 120 Minute IPA

Clocking in at 15-20% ABV, 120 Minute IPA is continuously hopped with a copious amount of high-alpha American hops throughout the boil and whirlpool, and then dry-hopped with another pallet of hops. Unfiltered and abundently hoppy, it's the Holy Grail for hopheads!

We brew 120 Minute IPA a few times a year, but it goes fast. If you find some grab a few bottles -- some to enjoy and some to age.

Reservoir Distillery: Bourbon Whiskey

Born from a trip with friends and a declaration that we could do tradition one better, our Bourbon is a one of a kind, 100% corn mash bill.  We take that baseline of a great Bourbon and turn it up all the way, producing a big, bright profile.  Though most bourbons add a rye component to the mash bill for additional flavor – or, to a lesser extent, wheat – Reservoir trusts the full force of local corn and deep aging in our small barrels to produce a unique bourbon that is different from any other product available on the market.

Our Bourbon is the most traditional yet unique whiskey in our house expressions.  It’s a beautiful midpoint balance of sweet between the softness of the Wheat and the sharp grain of the Rye.  Appealing to experienced whiskey hunters and the novice alike.

Built to be bigger than the average Bourbon, our expression is bottled at 100 proof/50%ABV so that you can proof the spirit down to your liking and taste. We recommend trying our Bourbon Whiskey neat—to establish a baseline, then adding a touch of water or a single ice cube to temper the proof.

Our Tasting Notes:

Pour neat with a single cube sweating allowing the whiskey to open over the course of time

Nose: Vanilla, chalk, corn and toast

Palate: Char, pencil shavings, coffee and pecan with a medium to full body

Finish: Tobacco leaf transitioning into a sweet cherry finish that lingers

PAM THE BUTCHER'S New Year's Offerings

PAM THE BUTCHER'S NEW YEAR'S OFFERINGS: Entertaining at its best -- we offer everything from a 12lb. Piglet + Ham Hocks to Crown Roast of Pork + Pork Tenderloin. Don't forget to serve Hoppin' John on New Year's Day -- it's said to bring a prosperous year filled with luck.

Enjoy these recipes:

"In Cuba, this dish is traditionally served on New Year's Day. In this tradition, as in the Hawaiian luau, the pig is usually covered with banana leaves and cooked over a coal fire in a pit that's dug in the backyard. Because this method is not easy to do at home, the recipe below uses a small suckling pig that will fit in the oven, yet deliver the same delicious flavor. Ask your butcher to split the pig for you. Don't be afraid to give this recipe a try — cooking a whole small pig is like cooking a whole turkey." ~ Douglas Rodriguez, Epicurious

"Nothing is more majestic than this regal cut of meat — and nothing makes your house smell better while it roasts. Here, pork's natural sweetness is coaxed forward by the herbs and onions in the stuffing. And the crispy, savory bones are a delightful bonus. You will have to special-order this cut of meat (the rib portions of the loins are joined to form a circle) from your butcher." ~ Gourmet

"I’m not a big believer in superstition, but for some reason I’ve always eaten black-eyed peas on New Year’s Day. I figure starting the new year by indulging in a juicy superstition can’t hurt." ~ The Pioneer Woman

"It’s rustic, smoky, melting succulent pork with roasted potatoes…mmm…I promise you will be addicted!" ~ Lily and Dmitriy, GastroSenses

"Although there are innumerable versions of cassoulet, most are based on a stew of white beans and various forms of pork. The dish gets its name from the pot it's traditionally baked in, the cassole (see Note), which is often shaped like a wide inverted cone to insure the greatest amount of luscious crust. This version includes duck confit and the French garlic sausages that are a specialty of Toulouse." ~ Paula Wolfert, Food and Wine

Shrub District Cocktail Vinegars: Made in DC

The perfect stocking stuffers for the cocktail enthusiasts on your list!

Why “shrub?”

Before refrigeration, farmers used vinegar to preserve excess fruit during harvest. Wait a bit, then add some sugar and you’ve got “shrub.” Like the word alcohol itself, the term “shrub” originated in the Middle East. It’s an old art and we’re bringing it back and into the bar.

Shrub District cocktail vinegars are the purest expression of fruit you can find. From nose to lingering finish, our flavors capture the season in a bottle. Why? Because we use only  fresh whole fruit, herbs, and spices. Shrub District Cocktail Vinegars (aka “shrubs”) are proudly #MadeinDC.

Pure, unadulterated grapefruit flavor in a bottle. We use the juice, the pith, and the peel from organic grapefruits to give you layer-on-layer of delicious citrus. Kicking off with a hit of fruit, this shrub is tart and not-too-sweet as you sip. It finishes with a soft bitterness that lingers on the tongue and cuts through any cocktail. Trust me, you’ll know it’s there.

JUST GRAPEFRUIT pairs well with gin, Tequila, and Bourbon. Try it in the Move over Tonic, as a Grapefruit Old Fashioned, or in the Perfect Paloma. Embrace the bitter, brighten your spirits!

(8 oz) Don’s Old Fashioned is the perfect balance of bitter and sweet. Make the classic cocktail in under 10 seconds. Non-alcoholic. Makes 16 to 24 drinks

This is your go-to bar mix. Perfect for Margaritas, Daiquiris, Mojitos, Gimlets, Whiskey Sours, you name it. It also makes a great Punch base. If you need sour, reach for Shrub District LIME.

We capture that pure lime essence in the bottle. In fact, we think it’s actually more lime than lime. Why? Because we juice only whole fresh organic limes, pull out the essential oils from their peels, and balance everything perfectly between sour and sweet. This is your one step cocktail mixer.

CRANBERRY JUNIPER, our Winter Seasonal, offers the perfect balance of tart cranberries and aromatic juniper. This shrub is full of firm tannins and body from the cranberries’ natural pectin. The classic flavor screams “holidays.” Our cranberries come from the finest bogs in New Jersey. We’re laying down what we can to get us through the cold winter months ahead. Like the holidays, this flavor won’t be around for long.

Pick up a bottle of CRANBERRY JUNIPER and make an incredible Cosmopolitan. Or, if you’re a whiskey drinker, pair with ginger ale or ginger beer for a holiday highball like no other.

The Abyss Beer 2017 Reserve

Abyss BEER.jpg

A deep, dark Imperial Stout, The Abyss has almost immeasurable depth and complexity. Hints of molasses, licorice and other alluring flavors make it something not just to quaff, but contemplate.

As for the great “drink it now or let it age” debate, we stand clearly on the fence. Distinct and delicious on release, the flavors meld and fuse into an entirely different pleasure after a year or more in the cellar.

*2017 release date at our Pubs and Tasting Room in Oregon: November 17th
(Released every Nov/Dec: 2006-present)

The “remarkably limited” 100% barrel-aged variants of 2017:  The Abyss Rum and The Abyss Tequila, will be released at the above locations on December 1st.

Smithfield Ham

The flavor of southern hospitality. America's original artisan ham can only be cured within the Smithfield town limits (as decreed by law)! And the traditional handcrafting process has never changed – resulting in a superior lean ham, rich in color and robust in flavor.

Copper & King American Brandy

copper & King.jpg

A blend of superb exclusively copper pot-distilled brandy with real character and depth of flavor mingled in a unique, modern American style. Small batch distillation of superior, highly aromatic wine selected for exceptional quality.

Dogfish Pennsylvania Tuxedo

A spruce-infused pale ale, Pennsylvania Tuxedo pays homage to the flannel-suited hunters and gatherers who dwell deep in the backcountry of north-central PA.

Brewed in collaboration with family-run outdoor clothing company Woolrich, Pennsylvania Tuxedo is a sessionable concoction with a grassy citrus kick complemented by the resinous conifer notes of fresh green spruce tips. We went into the forests of north-central Pennsylvania and Georgetown, Del., to pick these fresh tips ourselves.

A dry yet doughy malt backbone lets the hops and spruce shine while still balancing out the bitterness, making this one an easy sipper.

This holiday season get creative and try something new.

Make this year an old-fashioned Christmas feast with this festive bird.

A Midwinter Night's Dram

A limited release of High West Rendezvous Rye finished in French oak port barrels.

How to Enjoy

We recommend that you enjoy this special spirit neat, due to its many layers of complexity, next to a warm fire as the snow piles up on the window sill. Also pairs beautifully with Fig Newtons!

The Name

Named after "A Midsummer Night’s Dream" by William Shakespeare.

Back Label Story

"Are you sure That we are awake? It seems to me That yet we sleep, we dream." - Demetrius, A Midsummer Night’s Dream, Act 4, Scene 1 - Wm. Shakespeare
Greetings good gentles and ladies. At High West, we consider whiskey an indispensable part of making it through the long cold winter. One taste of A Midwinter Night’s Dram alongside a cozy fire will surely transport you to a dreamlike state. This limited release whiskey is a sumptuous marriage of our Rendezvous Rye finished in both port and French oak barrels. The rye forms a beautiful base of vanilla, caramel and cinnamon; the port barrels enhance with plums and dried fruits; the French oak provides a spice accent. For us, A Midwinter Night’s Dram tastes like a proper Christmas plum pudding with lovely mulling spices, dried fruits, and crème anglaise.
So join us good ladies and gents. Gather ‘mongst thy family and friends, and raise thy glass to winters that are "Swift as a shadow, short as any dream; Brief as the lightning in the collied night." - Lysander, A Midsummer Night’s Dream, Act 1, Scene 1, Wm. Shakespeare
Lysander describes how quickly true love can vanish. This is how we feel about a dram of this whiskey. However, if you savor it slowly, we can attest that A Midwinter Night’s Dram will help you through the coldest night.
Fare thee well, David Perkins
